Alize Cognacs, produced by the house of L&L, are composed of eaux-de-vie from the Grande Champagne, Petite Champagne, Borderies, Fins Bois and Bons Bois areas of the Cognac region. These are referred to as the ”crus” of Cognac. Alize Cognacs are further distinguished in their use of the Folle Blanche grape, one of the oldest and rarest varieties in the Cognac vineyard. This variety lends lovely aromas of linden and violet to the brandies as well as generosity and longevity. Distilled in the only existing distillery in the heart of the town of Cognac, Alize Cognacs are matured in oak barrels from the Limousin region of France crafted by master coopers who have served our company from its beginning, and gently aged in our cellars on the banks of the Charente River. The family behind the Alize Cognacs, Jean Paul and Marie Claude Lafragette, not only have a century long history of winemaking behind them, but are also landowners in one of the most prestigious regions in Cognac, Grande Champagne. .

The Tequilana Weber Blue Agave plant is the core and essence of Cabo Wabo Tequila. Rooted, according to legend, by falling stars, thus manifested the plant’s blue tint and its reach to the sky. Though it can be hastily exploited over its lifetime, the agave plant typically matures and is harvested by the wisest farmers between the ages of 8-12 years. Until then, it is respected, nourished, bronzed and guarded by growers holding it in the highest esteem. Upon its harvest, an agave plant gives birth to the next generation through its ”raizomas” or roots extensions, which are planted on new, but equally sacred, ground. The heart of the plant travels to the factory on its journey to becoming Cabo Wabo Tequila. At the factory, stone steam-heated ovens cook the hearts. The baked and cooled agave core is then smashed and grinded, and its honey-like nectar is removed and stored for fermentation. Fermentation follows and is completely natural, with no chemicals added. The Distillation to 110 proof is a two-step process using pure spring and well water- First, ”Breakage” removes the larger impure particles to rid the bad, harsh flavor. Second, ”Rectification” purifies, refines and improves the aroma and alcohol content. Aging occurs in oak barrels and varies to produce distinct varieties of Cabo Wabo:. Reposado is aged in oak barrelsfrom 3 to 12 months.The fermented juice is then fine-tuned and regulated by our master tequila maker, and after that The Cabo Wabo Tequila is bottled in unique, hand-blown artisan glass bottles..

History : The process of making mezcal has not changed much since the Spanish arrived in Mexico in the early 1500’s and brought with them distillation technologies. The Aztecs near the mountain top settlement of Monte Alban in Oaxaca had cultivated a certain species of agave plant for juice which they would ferment into what they called pulque. The Spaniards, wanting something much more potent, began to experiment with agave. Mezcal vs. Tequila: Mezcal is made from the agave plant. The agave is also used to make tequila but in a different process. While tequila is made exclusively in the northwestern state of Jalisco, mezcal is exclusive to Oaxaca. Although tequila is most popularly consumed in the margarita, mezcal is almost exclusively served as a shooter, with or without a lick of salt and bite of lime. The Manufacturing Process: The long, pointed-leafed agave must be allowed to grow for a minimum of eight years before it is plucked from the earth and its pineapple-like core is separated. The cores of hundreds of agave plants are baked in a sunken pit for a few days, then mashed with a horse-drawn grinding wheel. The mashed remains are put in a huge barrel with water to ferment, followed by distillation in clay or bronze tanks covered by dirt and heated by logs. Steam passes through ducts and the condensation yields mezcal. In contrast, tequila also uses the baked cores. A sweet juice is then extracted by steaming and compressing the cores. The juice is fermented for several days and then distilled at low proof, and then double or even triple distilled. . Pungent spice,wood and mineralaromas.
